Greytown, 2001. The Town Hall was in a state of total disrepair; the site of The White Swan was an empty lot, and The French Baker was still a pet shop. Sun-dried tomatoes were new, sweet chilli sauce was fusion, and bowl lattes were still acceptable.

Then, in a little courtyard on the main street, Travis & Eve Clive-Griffin opened a restaurant called Saluté and started serving food that felt wildly exotic. Hummus. Harissa. Baba Ganoush. Pomegranate. Things we’d heard of but weren't entirely sure how to pronounce. But it worked, and for 16 years, Saluté was the place to eat the most glorious mosaic of flavours.

Saluté was a Cuisine Magazine Restaurant of the Year finalist in 2005 and 2007, but we didn’t need anyone else to tell us how good it was. We already knew. We all mourned a little when Saluté was sold, and Travis & Eve moved to the bright lights of Masterton.

Saluté: 2001-2016. Long closed. Never forgotten.
