Ours is a non-vintage expression, 100% Pinot Noir, using a multi-year blend, which is then bottled for secondary fermentation and aged 18 months.
Following this, bottles are riddled every day for 6 weeks, then hand-disgorged in-house by us.
Made in an Extra-Brut style with 5g/l dosage to complement the bright fruit and complex, slightly nutty palate.
